15-Minute Baby Mushroom Risotto (8 Months+)
Makes 1-2 Baby Servings
Ingredients:
100g cooked rice (soft, baby-friendly texture)
2 tsp Lilo Premium Mushroom Powder
½ tsp Lilo Garlic & Onion Powder
200 ml milk (breastmilk, formula, or milk of choice)
10g unsalted butter
1 tsp Parmesan cheese (optional, finely grated)
1–2 tbsp finely chopped spinach (fresh or thawed frozen)
Instructions:
1. Melt the butter:
In a small saucepan over low to medium heat, melt the unsalted butter gently.
2. Add milk & seasonings:
Pour in the milk, then stir in the mushroom powder and garlic & onion powder. Stir in the cooked rice. Cook for 5–7 minutes, stirring often, until it thickens into a creamy risotto texture.
3. Add Parmesan (optional):
Stir in the Parmesan cheese until fully melted and blended.
4. Stir in spinach last:
Add the chopped spinach and stir just until wilted (about 1 minute). This keeps the spinach bright and nutritious.
5. Cool and serve:
Let cool to a safe temperature. For younger babies, mash or blend to desired texture.
